A bit of interesting history: 1795 it became compulsory for British sailors to drink a daily ration of lime juice to prevent scurvy. Hence the term 'limeys' used by Americans to describe the British!

Mr. Lauchlan Rose, who founded Rose's shipping company in 1865, manufactured lime juice cordial for his ships' crews. But what to do with all the left over peel and flesh? By 1930, the company had started to produce lime marmalade.

This refreshing, pure fruit marmalade is made only with citrus fruits and sugar. It is also widely used as a glaze or a sauce in the roasting of game birds, duck, and geese.
