Mr. Lauchlan Rose, who founded Rose's shipping company in 1865, manufactured lime juice cordial for his ships' crews. But what to do with all the left over peel and flesh? By 1930, the company had started to produce lime marmalade.
Because this particular marmalade is made with both lemons and limes, it has an extra tart taste. It also makes a great glaze for chicken and game.
